Fuss Free Mini Fish Cakes For Little Tummies

These mini fish cakes are the perfect cod bite size for hungry little tummies. Devoid of any process nasties, these are super healthy without compromising on flavour.

Using a couple of slices of slightly stale brown bread, some fresh coriander and pepper make up some bread crumbs and place to one side.

Next up, whizz 500g of fresh cod fillets in a blender until you have a flaky mash.

Roll the cod mash into a pattie, roll in flour, dip into a beaten egg and then roll into the breadcrumbs.

Repeat until you have used all of the ingredients (500g of cod made 4 mini fish cakes, and 2 large fish cakes).

When ready, cook at 180•C for 30 minutes, until golden brown and cooked through.

These were a big hit with the kids!
